- 150 g (5.3 oz) Heavy Cream
- 20 g (0.7 oz) Glucose Syrup
- 150 g (5.2 oz) Blueberry Purée
- 20 g (0.7 oz) Unsalted Butter
- 550 g (19.4 oz) Tempered Milk Couverture Chocolate (35% cocoa)
- 100 g (3.5 oz) Tempered Dark Couverture Chocolate (54% cocoa)
- 25 g (0.9 oz) Whiskey

- Tempered Dark Couverture Chocolate (64–72% cocoa is ideal)
👨🍳 Instructions
1️⃣ Prepare the Base
In a saucepan, combine:
- Heavy cream
- Glucose syrup
- Blueberry purée
- Butter
Bring the mixture gently to a boil while stirring.
Remove from the heat and allow it to cool to approximately 35°C (95°F).
2️⃣ Make the Ganache
Add the tempered milk chocolate and dark chocolate to the warm fruit mixture.
Using an immersion blender, blend the mixture until perfectly smooth and glossy.
💡 Professional Tip: Keep the blender completely submerged while blending to avoid incorporating air bubbles.
Blend for about 5 minutes until the ganache becomes silky and perfectly emulsified.
Finally, stir in the whiskey until fully incorporated.
3️⃣ Set the Ganache
Pour the ganache onto a baking tray lined with parchment paper or a silicone baking mat.
Spread evenly to a thickness of approximately:

Allow the ganache to crystallize overnight in a cool room.
❄️ Avoid refrigerating, as this may affect the texture.
4️⃣ Cut & Coat
Once completely set, allow the ganache to return to room temperature if necessary.
Cut into neat squares.
Dip each piece into tempered dark chocolate and allow the coating to crystallize until firm.
